Syncing all iPad 1 music+photos to new MacBookAir (old PC stolen)

My old laptop was stolen last week and I have now purchased a MBA. I would like all the music/photos and data from the iPad 1 to sync with the iTunes on the MBA.
Currently its only syncing purchased items. Is there any way I can get the other music library and all photos onto the new MBA?
Can I also deauthorise the old laptop without having it in my possession?
