Unlink??

I have two iPads and I recently gave one to my wife after she broke hers. How can I unlink the two iPads so that she doesn't receive all my emails etc.?

You can do a factory restore on the iPad before giving it to your wife. She can then set it up from her latest backup, which would include her Apple ID and all settings, accounts, apps, music, etc. that she had previously set up on her broken iPad. As long as your email account is not on the iPad you gave her, she'll not receive any of your emails.
