I just bought a cable for my iPad 2 that is running IOS 5.0.1 and tried to connect it to my tv via the video and audio connections but can't view the iPad screen on the TV. Is there a setting or is this even possible?
Can you tell us what cable you have bought, I'm fairly certain you need a HDMI cable for this, hopefully others will chime in who know more.

I agree w/ Leelai, i.e. you need to provide some further information about your iPad to TV connection; the simplest way to connect the two is w/ the iPad HDMI cable (provides both video & audio in one easy cable), but from your description above you seem to be using separate video (either composite or component) and audio (R/L stereo, i.e. the usual red-white RCA connectors) connections - not sure which one?
Also you need to provide information on your TV? Is this a HDTV and what inputs does the TV offer (also please make sure that you have set the TV to the correct input)? Answers to these questions will help all of us to better respond to your needs - good luck and please post back!
