Classic Oat Cookies
Makes 30
Ingredients
175g / 6 oz unsalted butter or margarine, plus extra for greasing
275g / 9¾ oz demerara sugar (substitute with soft dark brown sugar)
1 egg
4 tbsp water
1 tsp vanilla extract
375g / 13 oz rolled oats
140g / 5 oz plain flour
1 tsp salt
½ tsp bicarbonate of soda
Method
Preheat the oven to 180°C / 350°F / Gas Mark 4.
Lightly grease two large baking sheets.
Cream together the butter and sugar until pale and fluffy.
Beat in the egg water and vanilla extract until the mixture is smooth.
In a separate bowl mix the oats, flour. salt and bicarbonate of soda.
Gradually stir the oat mixture into the butter mixture until thoroughly combined.
Put rounded tablespoonfuls of the mixture onto the prepared baking sheet, spaced well apart.
Bake in the preheated oven for 15 minutes, or until golden brown.
Leave to cool for 5—10 minutes, then transfer to wire racks to cool completely
