Classic Oat Cookies

Makes 30
Ingredients
175g / 6 oz unsalted butter or margarine, plus extra for greasing
275g / 9¾ oz demerara sugar (substitute with soft dark brown sugar)
1 egg
4 tbsp water
1 tsp vanilla extract
375g / 13 oz rolled oats
140g / 5 oz plain flour
1 tsp salt
½ tsp bicarbonate of soda

Method
Preheat the oven to 180°C / 350°F / Gas Mark 4.
Lightly grease two large baking sheets.

Cream together the butter and sugar until pale and fluffy.
Beat in the egg water and vanilla extract until the mixture is smooth.

In a separate bowl mix the oats, flour. salt and bicarbonate of soda.
Gradually stir the oat mixture into the butter mixture until thoroughly combined.

Put rounded tablespoonfuls of the mixture onto the prepared baking sheet, spaced well apart.
Bake in the preheated oven for 15 minutes, or until golden brown.

Leave to cool for 5—10 minutes, then transfer to wire racks to cool completely

The cookies are great. I'm thinking of adding currents to the next batch.

Re Chico chips. They sound yummy too. I may try chocolate brownies.

Back in oz for a few weeks
Had the best lamb chops on the barbie ,with salad ever.
Marinated them in crushed fresh rosemary,garlic, grated lemon rind and olive oil.
Salad of fresh orange avocado and rocket
Yummo
Amazing what being away from familiar food can do for your appreciation

Great, and they keep well too.

I cooked a couple of meals which were bland. :(. The baking or stir fry are more successful for me at present. :)

Warm green bean salad with goat cheese, pear, and Thai basil sprig vinaigrette dressing.
For the main event, Singapore noodles with a fire roasted plum tomato / red pepper sauce, garnished with mustard greens and pine nuts.
When the Admiral is in the galley, crew from all decks come running.

Yep, I made veg bake and chicken . I don't eat meat but my mother told me to eat just a tiny slither of chicken an I did.(she is worried that if I don't eat meat I will be like her weird sister and I am) And as I was putting it in my mouth my brother was watching the hole time because I don't eat meat and I ate a slither . But I had to wash it down with lots of vegtables !lol! I just don't like the taste! Any way is that why I am weird ? But I just don't eat meat at all!
