Forgot to grease the tin (I never do that!!) so it wouldn't come out cleanly and looks very untidy. Forgot to add the almonds on top before it went into the oven, so they are a bit pale & untoasted. The recipe said to cut it in half but that wasn't as easy as it sounds...
It also said to sandwich with strawberry jam, but for almond cake, thought apricot jam would be better. I doubled the amount of that too...at least...I am not stingy when it comes to things like that!
Then to "drizzle" with almond icing which took ages to do & it dried before I finished. Had to mix up more which means there's now too much...
Thought it needed some extra colour because of the un-tanned almonds so found those little chocolate bits, then some flags to make it an Olympic cake too
Hope it's been worth it. We shall see...
