Not a decent potato to be seen in Vanuatu.
Ground too hot.
They come in by a slow boat from goodness knows where.
And are soft and rubbery by the time they hit the shelves
I love mash with lashings of butter.....but not here..........

Can you grow any tubers in your climate? Cassava maybe?

Christmas day, we went to a place in Joplin, MO called the Pacific Rim. Chinese/Japanese/Korean/Thai/Mongolian dishes. Order an appetizer that was small bits of pork and veggies that you added to a lettuce wrap and put a sauce on it. I couldn't find a recipe for it, so I improvised one.

Sounds maybe like moo shu pork:

Recipe varies.

There's another Chinese dish that's a variation on that, served with lettuce, but I don't know the English name.

We have some purple yams here ,
But cannot get my head around as an ice cream.!
Wouldn't it be unpleasant ,amy other flavour with it?

Hard to describe, because the flavor is unique. But I'd say the closest comparison I'd draw (subjective) is a nut-flavored ice cream. It's still ice cream -- made with cream and sugar -- so the yam flavor comes with that. From what I've seen, many who try it like it. It's popular in the Philippines and Okinawa, where the yam grows (might not be the identical yam). In the Philippines, the same yam is used in many desserts; the flavor is popular.

In the U.S., ube ice cream is available at some Asian stores. That's also where I buy red bean ice pops (popular in many parts of Asia), green tea ice cream and macapuno ice cream (heavenly Filipino coconut-flavored ice cream that's better than any Western coconut ice cream I've ever tried).

Wow! Some really good international food today. Keep them coming. I love trying new recipes. Not sure about the yam ice cream though but I wouldn't say no unless I have tried it first.

More potato mayhem in the galley tonight. The main course is the Admiral's specialty .... "Kitchen Sink Hash" ....
as in throw in everything but! Handy for blowing out leftovers.

Tonight it's
Chicken Ballantine .
It's a rolled boned Maryland ,filled with ham spring onions garlic .
You sear in a pan and into oven for 15 mins
Meanwhile sauté tomato, onions and garlic add a splash of white wine. Porcini mushrooms if you have them!
When chicken ready slice in medallions
Serve on boiled rice and sauce over the top.
Can garnish with coriander .
Bowl of salad greens and you are set to go.

Is anyone interested in Beta testing my new food-recipe-discovery app for iPad and giving me feedback?
It is an early version, but in the app-store now. The app is a free app.

If interested, let me know and I will provide a link to the app.

Sure!
