Food anyone?

Love paninis. Eggplant (loads of garlic) actually cooks up well in our panini maker.

One of the best sandwiches I've ever had was an egglant vegetarian sandwich from a bakery in Portland, Oregon. My husband and I called it the "magic" sandwich, because it was so delicious without any meat and with only healthy ingredients. It had some kind of amazing aioli on it, which we were never able to replicate exactly.

Had Indian last night. Thinking of fondue tonight.
 
I'll try the garlic thing. Otherwise I find eggplant bitter. We're vegetarians in my home after being life long carnivores. It's hard some days, but always an adventure.

Yes, eggplant can be bitter. I've read that there are kinds that are less bitter, or you can cook certain ways to avoid bitterness, but I like the taste of the ones we usually get (big purple ones). There are little ones used in Asian cooking, too, but they taste different.

And you can't have baba ganoush (vegetarian!) without eggplant. Well, maybe you can, but that would be wrong.

The house smelt great during the bake. The cake should have been baked for 4 hours at 140C, but after an altercation it was done for 2 hours at 150C! The outsides are fairly crispy, but the centre is yummy!

That does look great! We are off to see Sleeping Beauty at The Tivoli Theatre in Wimborne Minster. We go every year. Great fun and my teenagers still love going.

Well, the panto was great. My sister-in-law had cooked a roast for us all so piled on into her house for a pork roast, roast potatoes and veg. We had a selection of puds. Melted Chocolate fudge cake, Xmas pud, apple/strawberry crumble, rhubarb pie etc... All with oodles of cream, custard and coffee to finish. Lovely. Nice end to the day.

Christmas day, we went to a place in Joplin, MO called the Pacific Rim. Chinese/Japanese/Korean/Thai/Mongolian dishes. Order an appetizer that was small bits of pork and veggies that you added to a lettuce wrap and put a sauce on it. I couldn't find a recipe for it, so I improvised one. I cooked some chopped onions in a little oil, then added chopped mushrooms, water chestnuts, bamboo shoots, and bite size pork pieces. I then added a cup of Hoisin sauce with ginger added. Just before the meat finished cooking, I pressed some garlic cloves into the mix. It came out real good.
 
A new potato soup on the go right now using russet (baking potatoes) onions, garlic and such.
Grocery store had a ridiculous sale on. 20lbs of potato for $1.99!

Not a decent potato to be seen in Vanuatu.
Ground too hot.
They come in by a slow boat from goodness knows where.
And are soft and rubbery by the time they hit the shelves
I love mash with lashings of butter.....but not here..........
