Ipad 3 IOS 5.1.1 upgrade to IOS 7.0.4 Advice

Hi All,

I am looking for some advice, I have an Ipad 3 running IOS 5.1.1, that has been Jalbroken (Cydia now gives lots of errors) and I want to update to IOS 7.0.4.

But I have a few questions:

Should I just back up the Ipad with ITunes or something else as well?
Will I loose any of the installed app, photos, emails, e-books, ect?
Will I have to, or should I reinstall everything after the Jailbreak or will tunes do it?
