First time I had Menudo (ages ago) was in Mexico. We ate at a little place off the beaten path. The cook used "tripe".
I was hesitant to dig in but glad I did because the flavour blast was amazing.
As for the cheese fries ... yes.
Potatoes first - I season them cold, let sit then BAM into a hot, almost smoking skillet to sear. Then veggie topping and cheese til melted.

I have never had it with tripe, but I suppose I would taste it just the same. You can alway at least try a dish and see if you like it first.
What do you season your fries with?
